Pork braised in Milk recipe

Pork braised in Milk ingredients list:

2 tablespoons of butter.
2 lb pork loin roast.
Salt and freshly ground pepper to taste.
2 ½ cup whole milk.
2 tablespoons water.

Instructions for Pork braised in Milk:

1. Heat the butter over high heat in a pan just larger than pork loin.
2. Season the pork and brown on all sides.
3. Reduce to a low heat and add the milk.
4. Simmer partially covered for 1 1/2 to 2 hours, until the meat is tender and the milk has been reduced.
5. Remove the pork and allow to rest 10 to 20 minutes before slicing.
6. Skim off the fat from the pan, leave the clusters of milk solids behind. Add the water to the pan and cook over high heat, whisking, until the water has evaporated.
7. Serve the sauce over the pork.
